The Perfect Bite: Divine Pruning and Smoked Old Fashions

There is a specific kind of magic that happens in your 40s when you realize that the "subtractions" in your life were actually a divine intervention. Lately, it feels like God has been intentionally pruning the garden, removing the noise and those who only show up for a 'leg-up' or a performance, the kind of hollow, performative energy "The Echo" thrives on. In their place, I’m finding connections that feel like a mirror: soul-deep, grounded, and safe.

I had dinner at The Charles Friday night with Chelle, and it was the ultimate end to a productive week. Chelle is the embodiment of that "best life" energy—a dedicated mom and a brilliant entrepreneur with a photography business—but what truly captivated my Libra Sun and Mercury was the way she shows up as a wife. I haven’t seen a connection like the one she shares with her husband in a long time; it’s that "conjoined at the hip" friendship, the kind of soul-deep debriefing and decompressing that I share with my own husband. My Taurus Rising lives for that kind of stability, and my Capricorn Moon respects the solid foundation they’ve built. Seeing her so absolutely happy and secure in her marriage was a quiet, beautiful validation. It let me know I’m on the right track.
The Culinary Audit
We were so busy being present that I skipped the interior photos, but the table was a masterpiece. Chelle had the Lamb Chops, served with charred broccolini and creamy mashed potatoes—she cleared the entire plate, so you know the seasoning was on point.

I opted for the Brown Butter Scallops over pearl couscous and a pumpkin purée. While the couscous was a bit quiet on its own, the moment you got that "perfect bite" with the scallop and the purée, the whole dish sang.

The highlight, however, was the experience of the drink. I ordered a the 417 Smoked Old Fashioned from their cocktail menu. It arrived under a glass cloche, trapped in a cloud of woodsmoke. When they lifted the top, the smoke clung to the orange peel and the ice cube; I made sure to take my first sip while the haze was still dancing on the surface.

The 417 Smoked Old Fashion
If I am going to do something special, I’m going to immerse myself in the experience. I followed that with a glass of rosé—a crisp, effortless pour that rounded out the evening perfectly.
The Charles Staples
This isn’t my first time here, and it won't be my last. If you’re visiting, I highly recommend their Brussels sprouts (absolutely amazing, not shown), the cauliflower steak, the Crab Croquettes, and the Seared Bass over greens.

Hummus Plate
For a lighter vibe, the Hummus is incredibly tasty and perfect for sharing over a glass of whiskey. If you have room, the Sweet and Smoky vanilla ice cream in the frosted glass is the only way to end the night. However, since I am non-dairy, I had the old-fashioned carrot cake and I am still savoring the next day with a cup of coffee.

The Charles is such a gem, just a short walk from the Charles County Courthouse. It’s not just a restaurant; it’s a lifestyle. Their market next door is a dream for entertaining—stocked with fresh meats, specialty sauces, and even vegan cheese options. Whether you’re grabbing a latte and a sandwich during the day or hiding away in their separate wine tasting room for a charcuterie tray, it’s a place that understands the art of living well.
